Ingredients
600 g (1 1/3 lb) mutton or beef
7 tablespoons oil
2 1/2 cm (1in) stick cinnamon
3 cardamoms
6 cloves
2 sections of a star anise
Ground Ingredients
8 shallots
3 cloves garlic
5 cm (2 in) ginger
2 1/2 cm ( 1 in) galingale
5 tablespoons meat curry powder
1 coconut, grated (for 2 cups thick coconut milk and 3 cups thin coconut milk)
4 potatoes, quartered
3 tomatoes, halved
1 1/2 teaspoon salt
1/2 teaspoon monosodium glutamate
How to Prepare It
Cut mutton or beef into thin slices
Heat oil in a pot and fry whole spices for a few minutes. Add curry paste mixture and fry until fragrant and oil separates. Put in meat and fry until meat is well coated with ground ingredients.
Add thin coconut milk and bring to a boil. Then simmer gently for 40minutes or until meat is almost tender. Put in potatoes, then tomatoes. Add thick coconut milk and simmer until meat is tender and gravy is thick. Add salt and monosodium glutamate.
