Ingredients
450g (1 lb) spanish mackerel, preferably head portion
1 teaspoon salt
8 small sour starfruit
1/4 teaspoon salt
3 tablespoons oil
Ground Ingredients
6 red chillies, seeded
10 dried chillies, soaked
10 shallots
3 candlenuts
2 1/2 x 1 1/4 cm (1 x 1/2 in) dried shrimp paste
2 red chillies, seeded and sliced at a slant
1 stalk lemon grass, crushed
1/2 coconut, grated (for 2 cups coconut milk)
1 teaspoon sugar
1 teaspoon salt
How To Prepare It
Season fish with salt for 10minutes. Rub small sour starfruit with salt and leave aside.
Heat oil in a kuali and fry ground ingredients, sliced chillies and lemon grass until fragrant and oil separates.
Put in coconut milk, small sour starfruit, sugar and salt and bring to a slow boil. Put in fish and simmer for 5 minutes until cooked.
