600 g (1 1/3 lb) wolf herring, cut into 7 1/2 cm (3 in) slices

Ground Ingredients
30 dried chillies, soaked

2 1/2cm (1 in) ginger
1 1/4cm (1/2 in) square dried shrimp paste
1 teaspoon turmeric powder
- 2 tablespoons tamarind paste
- 3 cups water
- Mixed and strained
180 g (6oz) salted Tientsin cabbage, sliced and soaked
1/2 teaspoon salt, or to taste
1 teaspoon sugar
1/2 teaspoon monosodium glutamate
How To Prepare It
Clean fish, rub with salt and leave aside.
Heat oil in kuali and lightly brown shallots and garlic. Add ground ingredients and fry till fragrant. Add strained tamarind juice and bring to a boil.
Put in salted Tientsin cabbage and simmer for 2 minutes. Add salt, sugar, monosodium glutamate and fish and cook till fish is done.
